These are simply the best cookies in the history of the world and they may even be a little good for you. They are always a big hit at our parties so I had Brenda Kay share the recipe with you. They contain healthy organic coconut oil, butter, and almonds. Here’s the recipe:
1/2 c. extra virgin coconut oil
1/2 c. butter (not margarine)
3/4 c. white sugar
3/4 c. packed brown sugar
2 eggs
1 t. baking soda
1 t. salt
2 t. pure vanilla extract
1 t. almond extract
2-3/4 c. all-purpose flour
2 c. coconut (sweetened or plain)
1 c. sliced almonds
2-1/4 c. semi-sweet chocolate chips
Cream the coconut oil, butter, and sugars together until fluffy with electric mixer. Add eggs, soda, salt, and extracts and continue mixing until well blended. Stir in the flour by hand. Stir in remaining ingredients by hand until evenly mixed. Drop or scoop approx 2 T. dough onto parchment paper lined cookie sheets. Bake at 350 degrees for approximately 8-10 minutes, until cookies are just slightly golden on the edges. Cookies are best if not overbaked. Remove from pans and let cool. Eat immediately or store in freezer until 10 minutes before serving. Enjoy!
